BBQ Kangaroo on Coconut Rice
LUNCH/DINNER
RECIPE
Rinse and cook rice per instructions. Add coconut cream and bone broth concentrate to cooking water, bring to a boil.
Add coconut oil to pan and Cook Kangaroo steak for 2-3 minutes per side, add herbs and BBQ sauce to last minutes of cooking, add splash of water to deglaze pan to make a sauce. take steak out of pan to rest.
Add Broccoli and 1 cup of water to pan, cover for 5 minutes.
Slice Kangaroo and Serve on rice with broccoli.

Tuna Antipasti Sandwich

Method
1. Place whole capsicum under the grill (broiler) and bake until the skin becomes charred and crispy.
2. Remove the capsicum, let it cool slightly, then peel off the burnt skin. Season the peeled capsicum with a pinch of salt.
3. In a mixing bowl, combine avocado, feta, olives, and tuna. Mash everything together until well mixed but still chunky.
4. Layer the grilled capsicum, basil and tuna mixture onto your bread of choice and enjoy!
